L’objectif du travail est d’évaluer le niveau de bien-être des poulets de chair via des indicateurs relevés en élevage et à l’abattoir. Pour cela, un suivi longitudinal de 33 lots de poulets a été réalisé en région Bretagne. A l’abattoir, les lésions cutanées étaient notées, et en élevage, l’activité des poulets était observée. Une analyse histologique a été réalisée sur 55 pattes. La grille de notation des lésions de pododermatite, étayée par des analyses histologiques, comporte 11 classes combinant la taille et la gravité des lésions. En fin d’élevage, les poulets observés se déplacent globalement peu (peu de pas, de temps et de distance) et ont majoritairement une bonne qualité de marche. A l’abattoir, la prévalence des lésions de carcasses varie en fonction de la lésion considérée et de sa localisation. La très grande majorité des pattes présente des lésions de pododermatite (le plus souvent graves). La moitié des tarses présente des lésions (surtout modérées et de petite taille). Les carcasses présentent surtout des griffures anciennes en face dorsale, des ampoules de bréchet et des pustules en face ventrale. Les déplacements restreints de la majorité des poulets en élevage confirment les données bibliographiques et peuvent expliquer la dominance des ampoules et des pustules. Des densités élevées peuvent expliquer la prédominance des griffures en face dorsale. La grille de notation des lésions de pododermatite en poulet de chair fournit un outil simple, objectif et inédit. Cette grille pourrait permettre une comparaison des données à l’échelle européenne.
